PINEAPPLE LEMONADE!

Ingredients:

  • 1 cup fresh pineapple chunks (or canned pineapple chunks)
  • 1 cup fresh-squeezed lemon juice (about 4-6 lemons)
  • 1 cup granulated sugar (adjust to taste)
  • 4 cups cold water
  • Ice cubes
  • Lemon slices and pineapple wedges for garnish (optional)
  • Mint leaves for garnish (optional)

Instructions:

  1. Prepare the Pineapple:
    • If using fresh pineapple, peel and core the pineapple, and cut it into chunks. If using canned pineapple, drain the juice.
  2. Make Simple Syrup:
    • In a small saucepan, combine 1 cup of water and the granulated sugar. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let it cool.
  3. Blend Pineapple:
    • In a blender, blend the fresh pineapple chunks until smooth. If the mixture is too thick, you can add a little water to help with blending.
  4. Strain Pineapple Puree:
    • Strain the blended pineapple through a fine mesh sieve or cheesecloth to remove any pulp. Collect the pineapple juice in a bowl.
  5. Mix Lemonade:
    • In a large pitcher, combine the fresh-squeezed lemon juice, pineapple juice, and the simple syrup. Stir well to combine.
  6. Add Cold Water:
    • Pour in 4 cups of cold water and mix well. Adjust the sweetness by adding more sugar if needed.
  7. Chill:
    • Refrigerate the pineapple lemonade for at least 1-2 hours to allow the flavors to meld and the drink to chill.
  8. Serve:
    • Fill glasses with ice cubes and pour the chilled pineapple lemonade over the ice.
  9. Garnish:
